Much of that depends on where you eat the macarons. If you eat them in France, they are 1000x better than other places because of foods laws and how they’re made (you have to let the egg whites sit out unrefrigerated overnight to get great macarons, which is illegal in the U.S.).

Unfortunately in my case chocolate triggers migraines because of food sensitivities, but I also wish this helped as chocolate is a major comfort food for me. (I do have enzymes that help me be able to eat chocolate without a headache but only in small quantities.)

My personal flour blend is 2 parts brown rice flour, 1 part potato starch, 1 part tapioca starch. Then I sometimes add a little glutinous rice flour if it’s a pastry or sweeter item I’m making. If you can’t do potatoes, another finely ground starch might work instead.

Also, glutinous rice flour doesn’t contain gluten. It’s just how the term is translated. Sometimes it’s called sweet rice flour.

Experimenting with the types of rice flour can eliminate some of the grittiness. I usually avoid white rice flour because it’s so gritty. Brown rice flour has better texture. Glutinous rice flour from Asian stores is even better for some pastries because it’s so finely ground. Mixing them works well
