My wife went vegetarian about 5 years ago as well. We found that lions mane mushroom shreds up to look like crab meat and has a fishy taste to it so we've been making lions mane rangoon which is a pretty close replacement. So if you can get that mushroom anywhere, look up a recipe and give it a try.

What helped for me is that I replied to the initial welcome email from [email protected] saying that I hadn't received any papers yet. Got a reply within 2 mins that it logged my request and then a reply within 6 hrs from a support staff who helped me out and I got my missing issues soon after
