Roast broccoli, potato, red onion, carrot, zucchini for 30 minutes at 425, then set to broil for 5 minutes
Cook quinoa per instructions, ~20 minutes
Sauce is: chili crisp, peanut butter, tahini, tamari; thin with water to desired texture
