Recipes from week 1 of my garde manger class. Check alt text for notes. Will add a bit more info in comments in a moment. Feel free to share with others.
The salsa recipe is highly variable, allowing for a lot of experimentation. Highly recommend roasting the peppers over an open flame if possible. Use the onions sparingly. For the pesto recipe, you can substitute the pine nuts for different tree nuts like pecans or walnuts. Different herbs are possible as well. Be careful not to process it too much, or the herbs will bruise and cause it to turn black. You know how the pan has stuff left on it after cooking something in it? Deglaze means adding a liquid while the pan’s still hot so you can get that stuff off and add it to the mix. The coulis is another variable dish. I did mine with green peppers and red vinegar. Just like the salsa recipe, highly recommend roasting the peppers for more flavor. This vinaigrette recipe is pretty much a blank canvas. You can do all sorts of variations. Just know this: The majority of vinaigrettes have the same oil to vinegar ratio of 3:1. Don’t do this one on low energy, because it requires a LOT of whisking. Sometimes the sauce might break and get chunky. If that happens, put some oil in a bowl and whisk while adding the mayo to the bowl until it gets smoother. This is another highly variable method. The one shown here is the one I used for my class. I recommend letting the butter sit at room temperature to soften up, which will make it much easier to mix. And don’t worry, I know I wrote down directions for machinery, but all this can be done by hand. When the butter is blended with your spices, mold it into whatever shape you want, cover it up, and refrigerate.
