Butterflies on today's walk in a sheltered spot near Dronfield, NE Derbyshire. Speckled wood, green-veined white, male orange-tip with green-veined white.

So this is the first loaf in new tin rather than boule in roasting pan. Overnight proofing after mixing well and no shaping. I think it went well and would have been ok with longer than 8 hours proofing.

3rd loaf. Natasha's Soft and Fluffy recipe and method. Excellent result after allowing a longer proofing in my coolish house.
Used brown rice and buckwheat flour in place of sorghum and 90g starter. Also added 50g mixed seeds.

My first attempt at a gluten free sourdough loaf. Not very pretty on the outside but has a heart of gold! Feeling quite pleased with it ☺️
