The new postgame content is mostly what you would expect, mild reuse of already-created content. What is new is pretty fun for those who went through the whole Erdrick trilogy in the HD-2D package. There is one fan service nod they didn’t do that they totally should have: this unused Zoma form

Found this egg lodged against a seat cushion, saw the label said 18+ so obviously I had to open that shit. Saw the items were some candy, a sticker, and a little turtle figure and thought “So why did it say 18+????”

They do have a small handful of pokemon that only spawn in specific regions of the world, or only one hemisphere, etc. Currently one of the most valuable pokemon is Pharaoh Trim Furfrou because you can only get that haircut for it while in Egypt.
