Goat cheese tamale recipe and mango salsa recipe. I cheat and do not always do homemade salsa, esp since Chip Magnet makes an excellent mango salsa, which the kid likes, and a habanero mango salsa, which I like.
The scribbled note on the side is Chipotle powder, which I add to the mixer.

I swore like crazy the 1st time, but it gets easier. Wrapping them in husks and tying them off is the bulk of the swearing. Tip: pick all of the biggest husks out of the pack first and use those. The small ones can be torn in strips and used to tie the tamales. Eventually, u get the hang of it.

For Xmas Eve, I am doing a red pepper relish on ciabatti rolls, split in half, toasted and on top of the relish is a basil leaf and goat cheese...serving with spaghetti and veggie meatballs.
