Edible with improvement is still a success. I want to get one of those thermometers that monitor while we’re cooking because ours can be improved too

That really sucks I wish it had gone better for you. We do a dry brine of Jane’s Krazy Mixed Up Salt, for ~24hrs then before cooking, rinse it, season, shove butter under the skin (like a 3/4 of a stick in pats), & bake it covered until it’s at like 140°F, then uncover it and let the skin crisp up.
