Tinned fish setup of the week is Littleneck Clams with Confit Garlic and Chile de Árbol in Olive Oil. They're my personal favorite of our tinned fish selection. The clams are single-origin from Cherrystone in Cape Charles, Virginia and tinned by our friends at Island Creek.
On a bamboo wooden tray, on branded red and white parchment paper: an open can of Island Creek Littleneck Clams with confit garlic and chili in extra virgin olive oil, slices of dong phuong brioche bread buns toasted in Plugra clarified butter, pickled red onions, candied jalapenos, garlic lemon dip, cornichons/gherkins, a sliced lemon wedge partially dipped in Old Bay Chesapeake crab seasoning, and edible poppy flowers... On a stainless steel kitchen counter, aluminum trays hold bamboo boats on branded parchment paper. Inside, toasted Dong Phuong brioche sandwich buns filled with a quarter pound of Maine Lobster claw and knuckle meat — one boiled and tossed with a Hellmann’s mayonnaise and a fresh lemon juice dressing, one butter-poached in Plugra clarified drawn butter— garnished with fresh chives and edible flowers. Sliced fresh lemon wedges partially dipped in Old Bay Chesapeake crab seasoning. The Nell Shell lobster roll and seafood popup. 🦞
