Dinner Tonight: Salmon Rosti

I got this recipe from Eating Well magazine years ago. The patties themselves are a bit bland without the caper/dill sauce so I recommend making it or adding some extra salt and pepper to the salmon mix. Or both!

Dinner Tonight: Hungarian Potato and Sweet Potato Soup

A Crescent Dragonwagon classic and one of my favorites. I chopped and measured out everything and nominated Chris to finish the cooking.

Dinner Tonight: Creamy Spinach and White Bean Soup

I cooked the beans from dry in the Instant Pot earlier today and whipped together this easy soup in minutes tonight. Topped with some of the fried shallots I made last week.

Dinner Tonight: Fresh and Wild Mushroom Stew

This was a bit involved (thinly slicing 2 pounds of mushrooms and you cooking the chanterelles separately, frex) but it's yummy and it's chanterelle season, it had to be done.

Served over egg noodles by request.

On my continuing mission to use the last of my winter break to cook and organize. One of today's efforts is making vegetable stock from scraps I've been saving. Celery leaves, fennel stalks, leek greens, mushroom stems... mmm, soup season!

In 2019 Pramas bought a tea set for our 18th anniversary (porcelain anniversary!) and served up a whole celebratory tea to celebrate. Today he used it again to serve a New Year's tea for us. He did all the work, baked the scones, made the tea sandwiches. So good!
