Bottling hot sauce for the holidays!
The red sauce is from random red peppers, seasoned by taste on the fly. A bit smoky.
The orange is habanero pineapple. Has a kick but not too brutal.
Both were lacto-fermented for several months, then blended before bottling. 🍽️ #kungfuhots

I swore I wasn’t going to ferment any more peppers for hot sauce this season but they just keep growing. Now I really mean it. 🍽️🌶️

I made this Irish Red Ale and was pretty disappointed when I first tasted it a week or so ago. Mash OG was weirdly low, body thin, ABV low. Thought I might have to dump it. But now it’s not bad. Seems I always shortchange the value of conditioning and patience. Hope I learn someday. #homebrew

Latest KungFu brew: Citra Smash beer with Kansas Malt Co. Pilsner, Omega Tropical IPA yeast, and Citra pellet hops. Vigorous fermentation ended up at 6.8%. Just dry-hopped at 2 days. I hope my optimism about this one is not misplaced. #homebrew

🍽️ Zucchini and potato focaccia, based on @smittenkitchen.bsky.social recipe. Didn’t have salami but had Spanish chorizo. Cooked it on the gas grill (on 2 stacked pizza stones) given the punishing summer heat, but finished it under the broiler to crisp up the top. Would do it again.

🍽️ Mufuletta Dogs w Central Grocery (New Orleans) olive salad. Spiral cut and grilled. Perfect for a summer Saturday afternoon.

New beer label, designed for me by my daughter. (Kung Fu is our house “brand” for all of our homemade products that we share with family and friends. As it says, since 1986!)

I’m in Jyvaskyla, in central Finland, now. At Pyynikin Brewhouse. Having a Pohjala Kask Forest Lager. Bartender says this is from Estonia, has birch leaves in it and “is a good sauna beer.” Dig it. Never had anything quite like it. Would drink it again.
