Some local treats for #DairyJanuary. raw milk, A2 cream top, water buffalo lassi, thick PA yogurt with walnuts. Pink drink is raw milk with raspberry syrup from my freezer.

Son has been freezing smoked salmon. So I cubed it (frozen) and tossed the little chunks (after thawing slightly) on my salad with dandelion leaves and Hawthorne Valley Ruby Red Kraut. Different shape, new experience.

Very good and long overdue USDA advice to eat real food in the right proportions. Fermented foods! No sugar! Limit alcohol. Not sure if they have science to suggest limiting saturated fat to 10% of total calories. Traditional diets contain wide range of fats.

Mayonnaise is made of seed oils which are UNsaturated. (You’re lucky if it contains a real egg yolk.) So much ignorance about fats, not to mention the big myth of the alleged Mediterranean diet Ancel Keyes promoted. Read “Real Food: What to Eat and Why.”

A very impressive slab of full fat yogurt (the top layer looking like icing is the fat) from one of my new farmers, Pleasant Pastures. The raw milk was excellent.

If you tip my cold chicken soup, it doesn’t run out – that’s how thick the chicken stock is from two poached chickens and boiled bones, neck included. Also, the fat is yellow. Directly from the outside fridge.
