This recipe is also tangier than ricotta, and can be made as dry as you like, depending on how much whey you squeeze out. (Should you ever find the time!)

Recipe:
1 gallon milk
Juice of one big lemon
Pinch of salt

Heat milk and salt gently to just boiling. Turn off heat, stir in lemon juice, and wait 5-10 minutes (or less) for it to curdle and separate. Strain through cheesecloth to desired consistency.

Makes 1 lb.

Some use white vinegar not lemon.
