Yeah! I think it looks sweet. Although I'm wary of it in my apartment because I've seen so many triclamp gone wrong situations in breweries.

1st/2nd gen was threaded, right?
I think the newest model is a TC fitting which pop off pretty smoothly. You can also put a gas post on the bottom, so if you do a dryhop you can rouse with CO2 or carbing, but I'd be interested in attaching an oxygen tank to it to aerate.

I really want the one with the valve and triclamp fitting on the bottom for harvesting yeast and dropping out the hops.

We are genuinely in the golden age of homebrew when it comes to techniques, technology and what is commercially available. I regularly have homebrewers bring me beer that is better than what I get to make on a commercial system because they're largely not restricted by cost, schedules or trends.

Well I'm a huge yeast nerd so if you ever take another swing at homebrewing I'd love to talk yeast strains! Kveik is a personal favorite. Something to be said about brewing on a Saturday to be ready on a Friday.

Kegging is a real game changer. I'm nostalgic for bottle conditioned beers sometimes but just being able to serve from a keg is the best.
I use a fermzilla fermenter and just serve directly out of it, using it like a keg.

Sort of. Depends on the size of your tanks. Some yeasts actually has desirable qualities with a little weight on them so we'll ferment those under a little pressure.

The main risk with a secondary is it's an extra contact point for microbes and it's a pretty big oxidation risk.

Looks great!

You might be getting a funny mouth feel from the minerality in your local water, or just some left over yeasties in suspension. Lager yeast takes a long time to fully flocc out.
