For several DOS games (Tomb Raider for example) there's a patch so they can use the Voodoo, so that's the one for most compatibility.
If you're playing something like Unreal you probably want the Voodoo 2 (maybe even in SLI) for a bit more oomph.

My Pentium MMX 200 has 64MB of EDO RAM, but for Windows 95 or MSDOS/Windows 3.1 that's more than enough.
