Yesterday's lunch. Spicy chicken and roasted red potatoes bowl with a lime, jalapeno, and cilantro yogurt sauce. It was solid. I'll spare you the macros. Lol.

I've become one of those obnoxiously healthy people who report the macros on everything they cook, but come on, for something I threw together for lunch, I killed it.
Less than 500cal with 41.2g carbs, 11.1g fat, and 54.7g protein.

I've been on a bit of a health journey that has required me to radically alter how I eat. I've gotten pretty proud of my road trip, rest-stop lunches. Not too shabby, right?

It's avoid the stove and oven weather here. So, I basically cleaned out my fridge for this cold bean mix with a dijon vinaigrette. Let's see... black beans, mozzarella, red onion, cilantro, celery, tomatoes, cucumbers, corn, and jalapenos.
