My hand and forearm muscles are so fatigued from chiseling away at the frozen mess out front of my house that I dropped the fork *three times* while I was crimping these hand pies. 😭
The filling for the hand pies, cooling in a Pyrex bowl. The assembled hand pies, with two on a baking sheet in the foreground and two more on another tray behind it. Each of the hand pies are a rectangular shape, coated in egg wash, with the edges crimped.

I am making an attempt at chicken curry hand pies today!
My mis en place for the dish, including soy sauce, curry powder and flour, cornstarch, butter, diced chicken thighs, diced potatoes, diced onions, and chicken broth. The onions, in a large skillet, sautéed in butter with the curry and flour mixed in. A thick sauce resulting from the addition of chicken stock, soy sauce, and cornstarch to the aforementioned onions. The skillet filled to the brim and simmering with the chicken and potatoes added to the pan.

Whipped up the dough and it’s resting/rising for a couple hours. Now I’m fixing the sauce and letting it simmer for about 15-20 minutes.
The ingredients for the pizza sauce, including oregano, red pepper flakes, sugar, garlic, and a large can of whole peeled tomatoes. Nine or ten cloves of garlic sautéing in a sauce pan with oregano and crushed red pepper flakes. The assembled sauce, simmering on the stovetop.

Chili incoming~
Gathered ingredients for my chili sitting on my cutting board — including ground beef, chorizo, a can of beer, three types of beans, enchilada sauce, diced tomatoes, green and red bell peppers, garlic, and yellow and white onions. Not pictured, are chili powder, cumin, bay leaves, cracked black pepper, and a splash of fish sauce. All of the ingredients mixed into my blue Dutch oven, simmering on my stove.

After this week, it felt like a good weekend to run away to the woods.
