🍽️ Mid meal pic of a meh experiment: invented a sort of reverse mock beef bulgogi by first intensely browning ground meat, then simmering it in what would normally be bulgogi marinade (including onions).
Browning too intensely turns the texture gritty though and this was not remedied by simmering.

🍽️ Salmon fillet with rhubarb sauce. We still had this (last) container with rhubarb sauce from last spring in the freezer. Now to hope that rhubarb season starts again soon…

🍽️ Yesterday‘s christmas feast: Chicken galantine with red wine sauce, roasted potatoes and chestnut squash mash.

Everytime we make chicken galantine (fully deboned chicken filled with aromatics, greens, cheese, nuts, fruit and herbs), we say that we should make it more often!

Final update on the chocolate banana cake. This was the version we had at the party. Made two layers of banana and custard, but in retrospect a little more cream and a little less sponge cake would have been ideal. Also, we added some banana liquor to the custard. Yum!

Lu improvised a Tom Yam Kung adjacent dish with shrimp, coconut milk, leftover shiitake and lemongrass. We also had salad with pecan nuts and leftover frozen blueberries in the sauce. Trying to clean out the random bits from our freezer!

Second attempt at chocolate banana cake. This time with a vanilla custard with whipped cream instead of gelatin. Much much tastier! The chocolate glazing was a bit thick though and I think the butter/chocolate ratio was a little too small. Next bake is for real so wish me luck! #BakingSky #Baking

I test-baked a banana chocolate cream cake for Lu‘s birthday party in two weeks. And I‘m glad I did! It turned out a total disaster!
Always test recipes before an event… I would have been embarrassed to serve it!
(I made mistakes making it but the recipe was subpar, too…)

Today‘s fridge cleanout dish turned out pretty great! White fish with red berry sauce (berries were way too sour to eat as-is), beans with buttered breadcrums (Brösel) with rice and salad dressed with miso, sugar and lime juice (from limes that were more brown than green).

Vegetable soup including sweet potatoes, pumpkin, onion and tomatoes. Threw a bay leaf in there. Soup is hard to style for pictures but it was very good!

They had #porcini at the store today - while they were much more expensive than the usual ingredients we would use, we didn‘t regret it! Just lightly sautéed with shallots in butter and served with rice. So flavorful - wild how they‘re a whole dish on their own.

We ~80 pcs of meatballs and froze them just before the heat waves this summer so we wouldn‘t have to cook during the heat. Now we still have some left over and made meatball subs in hotdog buns with a small caprese salad.
