I hadn’t waited for the piece of paper before applying for chef jobs all over the place, I didn’t limit myself to fine dining - I was curious to see who would be interested in hiring someone like me.

I suspect it involves not being a 54yo woman.
I’ve been told in interviews odd things like one head chef wanting me to mentor him in plating, another that he knew I have more food knowledge than he does… but none of that has translated to work - in fact the opposite.
