With BBQ each piece of meat is different. I separate the point and flat, so an 18 lb brisket which would take 10+ hours, takes less time because it's two smaller pieces of meat. With brisket, you never go by temp rather go by touch. Probe should feel like going into room temp butter.

My parents and in-laws voted for Trump. The way I've explained it to my wife is they are objectively bad people. Listening to the way they speak when describing a person, the individuals sexual orientation or skin color are mentioned when they have no relevance to the story.

Remember the 1/3 pound burger failed in the US because a lot of Americans thought it was smaller than the 1/4 pound burger. Never underestimate the stupidity of the US.

Carbon steel pans are my favorite. Relatively quick heat up time, non-stick and the most overlooked factor they are durable as hell and easy to clean.
