Another recommendation, Schönburg Castle! Fantastic castle hotel on the Rhine River. Definitely add on dinner if you go!

If you get the opportunity, and have interest in history or engineering, I cannot recommend more the “Wilhelm Bauer” U-2540 museum in Bremerhaven. Considered to be the grandfather of all modern submarines.
