Another way to make your life at home more special, almost for free:

Next time you're processing a bunch of apples for a recipe, don't throw out the cores and peels. Put them in a big pot of water and add some cinnamon and let it simmer on the stove. It'll smell incredible.

I did some more cheap delicious healthy cooking today but didn't take photos of the end product.

Half pork loin, nearly 4 pounds, in the instant pot for 20 minutes with 2 chopped green apples and a whole bottle of BBQ sauce. Shredded and served over roasted golden and sweet potatoes.

Also going on in my kitchen: rice in the rice cooker for leftover beans for my daughter who doesn't like shepherds pie, and chicken stock simmering on the back burner. A friend didn't want her rotisserie chicken carcass so it's all mine for soups!

Into my big skillet went bacon fat, a chopped onion, 2 cloves of chopped garlic, salt, 1lb ground pork. When it was mostly browned, I pushed the solids to one side and added flour to the drippings in the other side to make a roux. In went steak sauce (aldi didn't have Worcestershire) & frozen veg

Simple, satisfying, cheap dinner: I made a shepherds pie hotdish thingy, which is really satisfying. I used ground pork because it's 1/2 the cost of beef at my Aldi.
