Seconding Story of Seasons. A bit more simple than Stardew or Mistria, but it'll scratch the itch for sure

As someone who has started a new farm on 3 different patch updates of Mistria (because I'm crazy), the existing content hasn't changed. Adding 8 heart events and deeper parts of the mines were the most recent, and 1.0 should add marriage. Starting now won't affect you much unless you speedrun it tbh
