How great that you still have that! I have a lot of my mom’s recipes but sadly my favorite two were just things she did on repeat and never wrote down. I make my own versions but it’s not the same. My grandfather was a chef and took it all to the grave but I have his meatballs and sauce memorized.

Several. Reggiano parmigiano, mozzarella, and some cheddar I wanted to use up. Some feta would have been amazing too.

Potatoes to thicken them (make sure they are seasoned). Let cool (don’t skip this part if you want it to hold the shape) then form into pie crust shape (I used my Pyrex pie pans). Add your quiche fillings of choice and bake. The potatoes are already cooked so it’s done when the filling is cooked.

I hope it wasn’t badly hurt. There is a swan in a nearby lake that leaves decapitated turtles all around the perimeter. I used to think they were so beautiful, now I know they’re just albino velociraptors! 🤣
