I’d recommend well-known series, since there’s a lot of fan art and you can learn from many different styles.
From those, Sailor Moon and Evangelion stood out to me. I’d suggest Ami from Sailor Moon and Rei Ayanami from Evangelion.

Do you have a favorite anime? If so, I think finding a character you like is best, because that feeling can be very motivating.
If I had to recommend one thing, I’d suggest starting with a character with a simple design.
