Hello! I live in Guanajuato, México. I am retired. I now have time to write, cook vegan food, do Tai Chi, consult the I Ching, lead online meditation groups, play the ukulele, study Spanish, and walk the city with my adopted street dog, Charlie.

It is long and complicated. If I could find it locally at a reasonable price, I would buy it instead of making it. Basically, you need to do the following with the soybeans: soak, grind, cook, separate, cook again, coagulate, press, and store. And every step involves cleaning.

Tempeh is a vegan food made from fermented soybeans. It originated in Indonesia. It is VERY healthy.

After innoculating the lightly cooked beans, I pack them fairly tightly in plastic sandwich bags, puncture breathing holes in the bags, and then incubate them. This is soy tempeh.
