OMG, Was in JFK terminal 8 on Sunday heading home to Seattle and look at this flight board, nine, count them, nine flights to London!!! I’ve never seen anything like it before.

Salmon.
I have cooked a lot of salmon.
Grilled, fried, planked, etc.
But I think I have found the best , surprisingly to me only recently.
Grill, cast iron (or carbon steel) with a lid.
Literally, place in pan, add lid, on grill, wait 15-25 mins, perfection. 🍜

There is a lot to like about WA State and one of the things I like a lot is how we vote. Ballots and info pamphlets mailed in advance. Fill out in comfort at home or wherever. Put in mail, drop off (my choice) or vote in person. Easy peasy and ballot status available online.

My first attempt at pasta amatriciana. So delish and, like most Italian classics, simple!
Pasta (pick the shape you like, I used mezzi rigatoni) guanciale, pecorino, tomatoes (I used a mix of canned peeled and fresh diced), salt, pepper and heat (habanero in my case). Yum! 🍜
