LA seemed way weirder/more interesting

I do get the impression that LA attracts more famous people who like the fame and attention and NY attracts famous people who would prefer anonymity.

i like drop bars because of the multiple hand positions but there are also flat bar options.
and every bike can take any pedal you want - platform, clips&straps, clipless (ironically the one that clip in).

one of my bikes has 2 sided time pedals- platform on one side, clipless on the other

if you liked covering distances but also want something more adaptable that will take much wider tires, check out a gravel bike with full rack and fender mounts.
there are plenty with more relaxed geometry.
