One thing I really hope for in the next persona game is that ATLUS keep making dynamic, vibrant and stylistic UIs.
Honestly, Persona 5's UI was one of the reasons that got me interested in playing the series. Since playing P5, I'm now hooked and really enjoy the gameplay and story it has to offer
