Kirinzan Junmai Ginjo with Tomato-Ginger Chicken Rice Soup. The seasoning of the soup is ginger, tomatoes, fish sauce, and lime juice. Those flavors complement the mochi rice, hint of cocoa and white chocolate flavor notes of the sake.

Shirasugi Chimera with Halibut with Brown Butter, Lemon, and Sage. This unusual label sake has bright, sweet, lactic tart, lichee, and apricot flavors that beautifully complements the nutty brown butter flavor of the dish.

Tedorigawa Junmai Yamahai Hiyaoroshi with Roasted Kabocha with Tomato-Ginger Chickpeas. This Yamahai Hiyaoroshi is very fresh Yamahai that has a little less of the mushroom character of “Yamahai-ness,” which means more freshness with the hint of cocoa umami with bright lime zest and ginger flavors.

Shinomine “Chokara” Junmai muroka Nama Genshu with Roasted Grey Sole and Sautéed Brussels Sprouts. The sake is very light, dry, and simple that calls for very light and vegetable friendly meal.

Date Seven Junmai Daiginjo, Season II Episode 4: Hakurakusei Style with Turkey Barley Soup. This sake tastes great when not too chilled. The flavors open up to reveal a blend of light umami, cocoa, and a citrusy finish that pairs beautifully with the layers of flavors of this turkey soup.

Tsuki no Katsura “Iwai 88” Junmai with Kabocha, Caramelized Onion, French Feta, and Mint Toast. This sake has less polished rice that gives more umami and richness, yet it has very clean dry finish. The sake goes so well with sweet onion and kabocha flavors with bright mint and feta cheese.

Happy Thanksgiving 🦃🍽 Pairing the dinner with Tsuki no Katsura “Iwai 88” Junmai. The sake has 88% milling rate that gives more umami, sweetness, and very dry finish. The caramelized onion and miso gravy is perfect match with the sake.

Senkin Retro with Miso Mushroom Barley Soup. The miso soup is not traditional miso soup, but it has ginger and chili pepper that gives brighter and mushroom earthy umami. The sake has bright pear and pink grapefruit and umami yeast flavors that pairs nicely with the vegan soup.
