there’s this local place that makes a pistachio puff pastry/cake dessert (it may be called katmer?) that’s everything baklava wants to be. puffier, crisper, nuttier, just the bare minimum of sugar. if you ever have it you’ll realize baklava is like a used diaper in the August sun
