Got my basement brewery up and running today! Collecting bits and pieces and one big splurge over many years got me here. Much tinkering to do yet, but absolute thrilled!

Mold is deadly, but wild yeast and bacteria infections are worth riding out to see if you got lucky. This ale, brewed with caramelized honey and chestnuts, picked up and wild yeast and got left alone for a year, yielding a remarkable holiday ale with funky, fruit, spicy notes.
