If you're sensitive to tannins a fruity light roast could work. I dislike the acidity of coffee, so I drink it with a fatty milk. Barista grade oat milk tastes better than cows milk imo! I also got started by drinking instant coffee with chocolate, maybe that could be a gateway for you too!
