Me too as o.adore.beets. Back when it.was.cpld(in the Pacific NW, I made a gigantic pot of beef borsht. I devoured it. I make Ottelenghi's beet dip with Greek yogurt, Zataar, garlic, s&p. And garnish it with feta, pistachios, more.Zataar, and drizzle olive oil.
