Belated Xmas dinner. Choice standing rib roast (bought on an insane discount), broccolini blanched and then stir fried in tallow, Mormon funeral potatoes, and goat cheese and caramelized shallot tartlets. Paired with a nice cognac.

I am a firm believer in turkey being king for Thanksgiving, but the oven roasting you usually see is just the worst way to prepare it. Just did a smoked turkey breast for the first time that was just an explosion of flavor.
