3. Mash potatoes in mixer, then slowly add butter/milk/cream/salt mixture and continue mixing on high until desired consistency.
4. Stop mixing. Cut cream cheese bar into fourths and push into the hot potatoes and allow to soften before mixing into mashed potatoes.

Directions:
1. Boil potatoes until soft, then drain. Move to mixer bowl.
2. While potatoes are coming to a boil, melt butter in small sauce pan, then add milk/cream; heat slowly and bring to slight boil; add salt and mix all together

5 lb russet potatoes

1 stick butter (melt first)
1 1/2 C milk and cream (I use 3/4 C cream and 3/4 C whole milk)
1 1/4 tsp salt

1 bar cream cheese
