Heard back from the FWA Hyatt after filling out their survey and explaining the AI art situation in their drink/food promotions during FWA once more... Progress? Let's see if they follow through.

My sincerest apologies for the AI generated art that was used to promote the Food and Beverage offerings in the hotel over the FWA Conference dates. I take full responsibility for this mistake and appreciate you bringing this to our attention as we are very grateful for the business that the FWA brings to our hotel as well as the city of Atlanta and many other Hyatt hotels across the country. Moving forward I will work closely with our Marketing team to ensure we are utilizing live images or reaching out to FWA artists when designing our marketing for the hotel during this conference. Thank you again for your feedback and if your travels bring you back to Atlanta, please contact me directly so that I can personally see to the details of your stay.

I already had contact with their Guest Experience Manager prior to my stay (off block, due to status and points, so I never actually got the email) and forwarded them the complaints along with my reasoning as to why that makes them look horrible in our eyes. Got a non apology.
