The thing that really kills my joy are mountains of poorly thought-out/written code that was created by people with zero thought behind it. There's an entire class of low-skill "shovel-ware" coders that could easily be replaced with AI and you would never notice the difference.

Environment is a big part of it. I *hated* writing code when I was working for a gigantic, heartless, multi-national corporation (even if they did inadvertently bankroll my fur suit). Now that I'm a largely self-directed member of a small team doing more niche work it's a lot more fun.
