An infographic that examines the customs of Chinese New Year and the chemistry behind them.
 Jiaozi is a dumpling, made from water and flour, traditionally made during Chinese New Year. Varying water temperature affects the dough's properties. Near-boiling water denatures flour proteins and gelatinizes starch. This inhibits gluten formation, producing a softer, less elastic dough that's easier to shape.
 In China, red is associated with happiness, success, and good luck, and it is prominent in New Year celebrations. The Chinese red pigment (mercuric sulfide) was used to color murals and ceramics. Because of its toxicity, it's no longer used. People in China also used dyes from safflower and madder roots to color clothes red. Firecrackers are widely used to celebrate Chinese New Year. The first natural firecrackers were heated bamboo stalks that exploded as air pockets inside them expanded. Later, black powder produced their bang. Today, manufacturers use flash powder instead.

The most significant aroma compounds are 2-acetyl-1-pyrroline (roasty, popcorn-like aroma), (E,E)-2,4-decadienal (fatty, fried aroma) and 2-furfurylthiol (roasted coffee-like aroma). Pyrazines, pyridines and phenols also contribute. Butter-flavoured compounds, including diacetyl, can be added, and can cause respiratory problems for workers in manufacturing facilities. Popcorn pops due to the escape of pressurised water vapour. Molten starch bursts through the shell and rapidly cools, giving popcorn its fluffy appearance

ネトフリの「ジョリージョセフ事件」をみた。連続殺人で主婦が逮捕されるなんて、てっきり冤罪事件のドキュメンタリーなんだろうと思ってみたらホントに連続殺人犯の主婦の話だった。嘘で塗り固めた14年間で６人も殺した女の話。
