Big problems with functional illiteracy, decline of reading for its own sake and what this means long term. NZ needs to act urgently to address this. Charter schools not the answer.

Without getting into the ‘who invented it first’ debate, I’ve spent most of my day making meringues for a pavlova. They’re fantastic examples of protein degradation:
- mechanical - whisking egg whites
- chemical - addition of vinegar
- temperature - baking low and slow
