I have used this recipe with all types of dried beans, and it always turns out great. For extra kick add fresh jalepeño and/or a tablespoon or two of hot sauce.

These beans are great with Ropa Vieja or as a basic side for dinner (think rice and beans!), as well as an eggy breakfast. By Rick Martinez | October 13, 2017 MAKES ABOUT 2 QUARTS Ingredients 1 pound dried black beans, picked through, rinsed 1 bay leaf 1 medium onion, finely chopped, divided 1 green bell pepper, seeds and ribs removed, finely chopped, divided 8 garlic cloves, finely grated, divided 5 teaspoons Diamond Crystal or 1 tablespoon Morton kosher salt, plus more 1 teaspoon dried Mexican or Italian oregano, divided 1/4 cup extra-virgin olive oil Freshly ground black pepper Cilantro leaves with tender stems (for serving; optional) Preparation Bring beans, bay leaf, 1/4 cup chopped onion, 1/4 cup chopped bell pepper, 1 Tbsp. grated garlic, 5 tsp. Diamond Crystal or 1 Tbsp. Morton salt, 1/2 tsp. oregano, and 5 quarts water to a boil in a large pot. Reduce heat to medium and cook, stirring occasionally and adding more hot water if needed to cover, until beans are tender and covered by about 1/4" liquid, 2 1/2-3 hours. Discard bay leaf. Meanwhile, heat oil in a medium skillet over medium-low. Add remaining onion, bell pepper, garlic, and oregano; season with salt and pepper. Cook, stirring occasionally, until onions are very soft and beginning to brown, 15-20 minutes. Stir into cooked beans. Top with cilantro, if using. Do Ahead: Beans can be made 3 months ahead. Transfer to an airtight container and freeze.

A fun fact about McCarthyism is that just two and a half years after he was condemned and censured, Sen. Joseph McCarthy drank himself to death at 48.

Fevers break. Petty tyrants fall. Censorship and persecution drive good people to stand together and fight back.
After his condemnation and censure, McCarthy continued to perform his senatorial duties for another two and a half years. His career as a major public figure, however, had been ruined. His colleagues in the Senate avoided him; his speeches on the Senate floor were delivered to a near-empty chamber or received with intentional and conspicuous displays of inattention. The press that had once recorded his every public statement now ignored him, and outside speaking engagements dwindled almost to nothing. Eisenhower, finally freed of McCarthy's political intimidation, quipped to his Cabinet that McCarthyism was now "McCarthywasm". McCarthy died in the Bethesda Naval Hospital on May 2, 1957, at the age of 48. His death certificate listed the cause of death as "Hepatitis, acute, cause unknown"; previously doctors had not reported him to be in critical condition. It was hinted in the press that he died of alcoholism (cirrhosis of the liver), an estimation that is now accepted by modern biographers. Thomas C. Reeves argues that he effectively died by suicide.
