Climate Friendly Eating - MEMORIAL DAY ONE DAY CHALLENGE

I will participate by eating an organic plant based diet on Memorial Day & will learn good recipes for my favorite Memorial Day food.
If I attend a gathering I will bring organic, local, plant based foods & initiate a conversation about them.

Scramble tofu the same as you would scramble eggs, or add tofu to eggs so they go farther. Add sauteed onions, herbs, spinach, broccoli... Tofu takes on the flavor of whatever you add to it. Use organic to avoid GMOs. Firm tofu holds up in recipes.
