Anyway, base recipe was a simple, cheap, 2-ingredient side, and every US based recipe seems to insist on adding extra ingredients like a block of cream cheese, garlic, peas, or ham because it's like Cordon Bleu I guess? and Extra steps like making a bechamel because also French? We can't toss pasta.

Let's cut to the chase and say the traditional "Alfredo" pasta al burro y parmegiano reggiano. It is JUST pasta, butter, Parmesan, tossed with a little salty starchy pasta water until it emulsifies.

American "Alfredo" is basically a white mac & cheese because we lost the technique in translation.+
