Or like as in "crash test dummy" - which stands in for a person. This is all to say, the word "dummy" can be used in a derogatory way, but that was not the original intent in this case (or many others).

I think the definition of dummy that is probably closest to how they are used is "something that imitates the real thing but isn't functional," as in these variables stand in for the the real variables, but aren't the real variables. (In British English, pacifiers are called dummies.)
