Only caveat there is that the yarn is usually under tension on the niddy noddy so this may throw off the numbers with some fibers

There’s a lot of good YouTube tutorials out there, but videos can’t answer questions, slow down to re-explain something, explain how certain mistakes happened and how to prevent/fix them… Definitely an advantage to having an in-person teacher.

Do you have any leftover yarn you can make a test swatch with? Wash that first and see what happens

You can unravel knitting the same way, though if it’s just a few stitches it’s easy enough to un-knit by slipping the loops back and pulling the working yarn out. You can also put in what’s called a lifeline, sort of like a save point so you can frog back but won’t go too far.
