Yup. Fantasy can go longer than other genres.
But self-pub status is not relevant here. The market is what it is, and sophisticated readers will recognize a too-long book when they see it.

Well, every publisher will certainly want to see that you have a pre-exting following. Social is but one path among many, to build that platform.

Unless you're already famous by some other means, social media might be all that's left. And it's something that anyone CAN do.

If the pubs artificially inflate the page count, it would only drive up their costs for production and shipping. Which drives up the cover price. Which is not good for business.
Nothing to gain.

No, that's not what publishers do.
Every genre has a standard word-count range. That's the only metric that matters here. Not pages.
No pub can "require" any author to do anything. Either the subs hit the right marks, or they don't.
