For the leftover gumbo greens tonight, I made some rice to scoop it over. Also some sweet potato cornbread that I poked holes in when it was done and let melt in some Texas roadhouse honey butter for good measure.

Gumbo greens. Basically a gumbo with andouille, chicken, and smoked turkey. But with about 3 lbs collards in with it. House smells delicious and they are fabulous

Roasted stuffed butternut squash. Roasted halves of squash with evoo, salt, pepper, and garlic powder. The filling is onions, garlic, Italian sausage, pecans, and dried cranberries. Also used some of the roasted squash in there as well. This is absolutely delicious and will be made again.

They say practice makes perfect. And I love bread. So it’s a dangerous combo. I spread a layer of garlic confit on the dough before the second rise. Topped with spicy garlic oil, halved cherry tomatoes, mozzarella pearls, Italian seasoning, and chili salt.

Focaccia with garlic confit, mozzarella pearls, Italian seasoning, and chili salt. Did something with the garlic confit and oil. Added 5 chile de arbol, rosemary, thyme, and salt to the oil for roasting. Turned out pretty good if I say so myself self.

Earlier today I made a seafood salad of chopped up steamed shrimp, imitation crab, imitation lobster, green onion, celery, mayo, and some old bay. I just ate a little bowl of it with some ritz sour cream and onion toasted chips and it was delicious. Lettuce cups tomorrow

Since my sleep schedule been all messed up, and I needed to cook this chick roast. Stuffed with garlic cloves, salt and pepper on everything on a bed of red onion with a little beef broth. And 3.5 hours later. Yes please. Smells fantastic. Will make sandwiches tomorrow with it.

Don’t get that many pics. But this is the finished stuffed shells, the finished focaccia, the filling for the shells and then some garlic confit I made that went in pretty much all the dishes.

I cooked all day today. 4 hour marinara, meatballs, spinach and ricotta shells, and a loaf of focaccia. But I’m too tired to eat

Had some leftover char siu and rice from the other night. So that calls for fried rice. Added some diced onion, scrambled egg, mung bean, a sauce, and some green onions at the end. Might look nit appealing but it’s delicious

Cheesy garlic butter focaccia. Did the butter focaccia bread but with roasted garlic compound butter. Topped it with Parmesan and mozzarella cheese. Par baked for about 10 minutes added more cheese and finished baking. Cannot wait to tear into this.

Furikake panko crusted Pork tonkatsu with homemade tonkatsu sauce, cabbage carrot and cucumber salad with a homemade Japanese sesame dressing and steamed rice. It’s what’s for dinner.

Finished product of the 40 hours cold ferment. Garlic and tomato confit with oil, mozzarella pearls, fresh rosemary, and Malden salt. Needs to cool a little longer before cutting into it.
