Italian Tater Tot Hotdish. Recipe in the alt.
Italian Tater Tot Hotdish Ingredients: 2 Tbsp olive oil 1 lb ground Italian sausage 1 Tbsp red wine vinegar 1 onion, diced 4 garlic cloves, minced 1 red pepper, diced 1 cup broccoli florets, diced 1 Tbsp dried oregano 1 28 oz can crushed tomatoes 1/2 cup beef broth Shredded mozzarella cheese Tater tots Salt and pepper Directions: Preheat oven to 375° and spray a casserole dish with non-stick spray. Heat olive oil over medium heat in a large-ish pan and brown Italian sausage. Pour in red wine vinegar to deglaze. Remove sausage from pan, leaving oil. Raise heat to medium-high. Add onions and garlic, salt and pepper to taste, cook 5 minutes until softened. Add peppers and broccoli and oregano. Cook 3 minutes, just until broccoli is bright green. Add Italian sausage, crushed tomatoes and beef broth, bring to simmer and let simmer 5 minutes. Check for taste, salt and pepper if necessary. Pour mixture into casserole dish, top with mozzarella (saving some), top mozzarella with frozen tater tots. Into the oven for 35-40 minutes. Remove from oven, sprinkle with remaining mozzarella, turn broiler on high, put back in the oven for a few minutes until golden brown and delicious.
