I actually have a suggested tailor in Hoi An. I went to Blue Chick, and they are amazing! As for the sunrise tours, I would find one that offers multiple temples. I don't think they would sell out, as the market looked quite saturated. If they do, you can always buy a day pass & explore on your own.

I just got back from Cambodia, Laos, and Vietnam a few days ago. Do a sunrise tour of Angkor Wat. Also, check out the floating village and sunset tour outside of Siem Reap. Vietnam is so much fun. I spent most of my time in Hoi An, but I also went to Hanoi. If you have any questions let me know.
