You could also go ground chicken or chicken sausage or even full vegan with alternatives, but you would need to make sure the fat content is high to prevent drying out

I don’t salt this at all but if going from scratch for bread you will need to do that and work up a seasoning mix (I have my own I’m not sharing ;3)

Make sure you pepper to taste (my family does not like much so I put limited amounts in)

Put balls on a parchment paper lined baking sheet and bake at 350 for 20-30 minutes to crisp all sides.

Put stuffing sausage mix into a large casserole dish, making as many pockets for surface area crisping, bake at 400 degrees for 30-40 minutes until cooked through (160F). Let sit for a few minutes

Scoop stuffing into rough ball shapes.
Can be cooled and stored in fridge for up 2 days in advance.

-1qt chicken stock
-6-8 tbsp of butter
-4-8oz dried tart cherries

melt butter and sauté onion, celery, and mushroom until tender crisp on medium high, add sage at end
Add stock bring to boil
Remove from heat and add in bread and tart cherries, thoroughly combine

Cool and hand mix in sausage
